Strolling thru the local Hannafords grocery store, making my way past the empty wasteland that used to house paper goods, I make it a habit of taking a pass thru the freezer section to see what goodies are in the ice cream section. Ice cream for anyone following low carb or Keto lifestyles for years was a hard “NO”. With the increased popularity of the Keto Diet and the demand for low carb treats companies, both large and small are cashing in on the opportunity. Great news for folks following a ketogenic lifestyle, however with increased popularity comes the need to remain ever vigilant as demand for low carb treats does not go unnoticed by marketing teams for BIG FOOD.
Enlightened brand of ice cream is owned by Michael Shoretz, founder and CEO of Beyond Better Foods. Founded in 2013 they are makers of ice cream that is good for you. They specialize in low calorie Ice cream desserts and Dairy-Free ice cream desserts. Here’s their story pulled from the Enlightened website
Michael Shoretz didn’t always know much about nutrition. That changed when his father was diagnosed with Type 2 diabetes. Fascinated with learning how to help people live healthier lives, Michael studied health policy and became a certified personal trainer.
Michael’s clients often confessed to eating ice cream by the pint, eager to make up for their late-night treat with a trip to the gym and desperate for a recommendation for a healthy ice cream option. Michael quickly realized that while better-for-you options existed, there always seemed to be a catch. Fewer calories just meant “sugar instead of fat.” Low sugar meant “filled with artificial ingredients.”
Ever the ice cream lover, Michael decided to try making some himself that would fit his clients’ needs—not only high in protein, but low in calories, fat, and sugar. With the help of talented experts and enthusiastic friends and family, the first box of Enlightened ice cream bars was created in 2012.
Following the white-hot “keto” trend, in 2019 they launched the Enlightened Keto Collection. Eight creamy and delicious flavors, each with 1g net carbs per serving.

Chocolate Glazed Donut
At 11g of carbs per serving this can fit nicely into a Keto Diet daily carbohydrate target. For those that track net carbs the 2g of fiber and 8g sugar alcohol bring the net carb count to a jaw dropping 1g of net carbs, 4g of net carbs for the entire pint!
Be forewarned, not everyone agrees that subtracting full value of sugar alcohol (like erythritol) is accurate. The University of California, San Francisco recommends counting 1/2 of the grams of sugar alcohol from the total
Because sugar alcohols are hard for the body to digest, the effect on blood sugar levels is less than standard sugar. When counting carbohydrates for products made with sugar alcohols, subtract half of the grams of sugar alcohol listed on the food label from the total grams of carbohydrate.
Remember that because sugar alcohols are harder for your body to digest, eating too many sugar alcohols may cause digestive complaints like gas, cramping and diarrhea.
The Taste Test
Finally we get to the good part! The name of this flavor caught my eye because who doesn’t love the taste of a chocolate glazed donut? Living a Keto Lifestyle precludes me from eating a Chocolate Glazed Donuts, but the taste is etched in my memory from the olden days. A Chocolate glazed donut from Dunkin Donuts packs 410 calories, 42g of carbohydrates and 20g of sugar… Like “shaking hands”, I don’t don’t see that happening anytime soon
As with most Keto-friendly ice cream, it’s recommended that you let them sit for 15 – 20 minutes to thaw after removing it from the freezer. I was pleasantly surprised to find that this pint was very creamy and not “crumbly” at all. The pint is has a french vanilla hue with chocolate swirls. In general the sweetness is good, not overly sweet, but sweeter than the Rebel Ice Cream Salted Caramel in an earlier review. The chocolate swirls mixed with the donut flavored vanilla give an overall flavor reminiscent of an actual chocolate glazed donut!
The texture was excellent, smooth and creamy, just as you would expect a pint of premium ice cream would be. I’m disappointed in the amount of the chocolate swirl, with premise that you’re getting the taste of a chocolate glazed donut I felt that there should be more chocolate swirl.
The flavor was solid, certainly tastes like you eating an ice cream, sweet and no aftertaste. However, the name of the flavor sets the bar pretty high… maybe unfairly high. While the flavor IS slightly reminiscent of a chocolate glazed donut, some of that claim comes from the power of suggestion… meaning that if I were blind taste tested and had to “name” what this flavor reminded me of, I’m not certain that I would attribute it to a chocolate glazed donut.
I rate this a solid 3 out of 5…as is with every flavor I review, I’ll definitely finish this pint at some point but it won’t be a favorite that I go back and buy for personal consumption
